Every year I have visions of cute Galentine’s Day brunches and presents. Every year time flies by and suddenly it’s the end of February and I have done nothing. This year was different though! I decided to stop wishing and dreaming so I rounded up my gang of awesome ladies and we put together a cute breakfast (accompanied by margaritas and mimosas!).

The Table:

Target carries beautiful, pure white dishes for only $.99 per piece.  I own a serving of four plates and bowls to mix in with my seasonal dishes. They are great supplement pieces to match any theme you are using.

For Galentine’s Day Brunch, I paired them with these super cute, white and gold appetizer plates, then stacked them with colored doilies, making it an adorable themed stack! Each place was set with a paper napkin, silverware, and a small box of chocolate to match the decor.

HomeGoods had a trifle dish that matched my appetizer plates almost perfectly. I used it for the fruit salad, using it as a taller center piece.  We paired that with ceramic heart dishes from HomeGoods, pink candles, and a string of metal heart lights to create a functional center for the table.

The Food:

Candy, candy, candy, and oh yeah, candy! You can’t celebrate Galentine’s Day without going over board with the sugar. However, since this was a brunch, we did have real food too! We had personalized egg cups, waffle sticks, fruit salad and Chocolate Chex Treats.

I mixed up a big batch of Chocolate Chex Treats the night before so they could fully set up and be ready to cut morning of. These are my own creation, using Chocolate Chex instead of Rice Krispies to make “Rice Krispie Treats”. They taste amazing and it is totally gluten free! I sprinkled heart shaped sprinkles on them before cooling and they were the perfect Galentine’s Day chocolate treat.

Our fruit salad was a pink and red masterpiece. Strawberries, watermelon, and red grapes tossed together and served in a cute dish stayed on theme for our Galentine’s Day festivities

I usually don’t use boxed mixes, but I knew I was going to be short on time so I wanted something quick! I used Bisquick Gluten Free Pancake & Waffle mix and it made perfectly light and fluffy waffle sticks. My Baby Cakes Waffle Sticks maker creates waffles that are perfect for dipping! They no longer make the one that I have, but this one from Walmart one is the new version! We filled ramekins with syrup and were good to go!

Egg Cups

Our personalized egg cups were probably my favorite part of the meal. We have very different tastes and allergies, so this gave us a great way to each have what we were in the mood for! My friend Sara suggested the egg cups as a good alternative to making a quiche or frittata and it turned out wonderfully!

The night before I diced onions, green and red peppers, and other veggies. When the ladies arrived, I pulled the prepped veggies, along with shredded cheeses, diced ham, bacon bits, and seasonings out and set up an “egg bar”. We whisked a big bowl of eggs (one egg per cup) and sprayed a muffin tin with cooking spray.

There were only four of us, so we didn’t worry about the egg cups getting mixed up, but if there were more of us I would have used cupcake liners and assigned people a color. We filled our cups on the muffin tin with whatever fillings we wanted, then topped it with egg. They cooked at 350 degrees for 30 minutes.

The Decorations:

I wanted the decorations to be classy while still being super cute and fun. There is a fine line between cute and cheesy when it comes to Galentine’s Day and things can so quickly head in an over the top direction.

Fortunately, Target’s Dollar Spot was full of cute decorations for a super reasonable price. If you’ve read any of my other posts, you know that probably 90% of the things I own come from Target! I also scoped out Home Goods, Walmart, and Marshall’s for odds and ends.

I found adorable metal heart string lights and doilies at Target in the dollar section! The lights were $3 and the doilies were $1 per pack. They also carried cute XO swizzle sticks for the mimosa bar!

I found super cute things at Home Goods, too! I grabbed this Rae Dunn vase, which I filled with the lights from Target for a cute centerpiece!

Walmart had pretty bouquets of flowers for on $4.95! I grabbed some of those to spread around the house. I think fresh flowers give a little bit of extra class!
